Recipe of the month

Rice with vegetables (PULAU)

Ingredients for approx. 5 persons:

  • approx. 1 cup rice
  • 200 ml peeled tomatoes or at least 4 fresh tomatoes
  • 1 red onion
  • 1 clove of garlic
  • fresh coriander leaves
  • 1/2 cm ginger slice
  • choosen vegetables (e.g. cauliflower, potatoes, peas, cabbage, carrots, brokkoli, zucchini, etc.)

    Tip: 2 different kind of vegetables are enough, one of it should be potatoes.

    Spices:
  • 2 laurel leaves
  • 1/4 tsp ground cardamom
  • approx. 1/3 tsp curcuma
  • approx. 1/2 tsp jeera, (pestled in a mortar)
  • a few mustard grains
  • 1/2 tsp coriander powder
  • approx. 1 1/2 tsp sweet red Paprika
  • approx. 2 tsp Himalaya salt (quantity as preferred)
  • 1/4 tsp pepper
  • 1 pinch of asafoetida (hing - available in Asia shops)
    Due to the tang smell it is advisable to keep asafoetida in an hermetic container in the refrigerator. If the smell is too unpleasant, this spice could be also omitted.

Peel the vegetables, wash and - so far necessary - cut into larger pieces. Add into a pot (e.g. pressure cooker) some oil and therein the laurel leaves, the cardamom and roast gently. Put now the already in stripes cut onions. When the onions becomes nearly glassy, press into the clove of garlic and add the finely chopped ginger. Afterwards stir-fry all further above mentioned spices (except asafoetida). As soon as the curcuma will be brownished, please put the tomatoes (without emulsifying agents and preservatives) or the quartered fresh tomatoes in the pot and let this sauce covered easily and shortly roast, until the oil appears at the surface. Subsequently give in the vegetables, the rice and approx. 5 cups lukewarm water (if the meal is supposed to be more smooth and light to digest, just add more water). As soon as the sensor of the pressure cooker comes back to the original position, the lid may be opened. Now strew a pinch asafoetida over it and if desired, some fresh, roughly chopped coriander leaves (also in Asia shops available). Please, blend well altogether. Dish up immediately.

Please, serve with nature yogurt and/or yogurt-dip (raita)!
